Apple Pie Sourdough
Grated apple in the dough and a cinnamon sugar swirl folded in at shaping. The kitchen smells like pie by the time the lid comes off. 59% hydration; about 26 hours end to end, most of it an overnight cold proof. Cinnamon slows fermentation, which is why the swirl goes in at shaping and not the mix.
Pumpkin Sourdough
Canned pumpkin in the dough and pumpkin pie spice laminated in before shaping. 55% hydration. Sweet or savory; the brown sugar is your call.
Cranberry Orange Sourdough Scones
Discard scones with fresh cranberries and orange zest, glazed while warm. Under an hour, and nothing has to rise.
Roasted Garlic and Rosemary Sourdough
A whole head of roasted garlic gone soft and sweet, rosemary folded through, cubes of asiago if you want them. 71% hydration with a long, cool bulk. The savory loaf for the Thanksgiving table.
Rosemary Olive Oil Sourdough
Olive oil in the dough for a tender crumb and a thin crust, rosemary and flaky salt on top. 67% hydration. A cold overnight bulk, then a warm proof and bake the next day.
